Garden Fresh Spring Roll
Ingredients:
Rice Paper
Cucumber
Asparagus
Avocado
Sides: Cherry Tomato
Peanut Sauce
Directions: Julienne and steam cucumber and asparagus for 1-2 minutes. Allow to cool. Slice avocado. Dip spring roll rice paper in water 5-10 seconds. Lay flat on a large plate. Fill with cucumber, asparagus, and avocado. When the spring roll rice paper is soft enough, roll the vegetables up, starting at the bottom, fold in the sides of the paper, and roll until the top closes the roll.
Add a side of peanut sauce for dipping and cherry tomatoes for color and added support for the Heart.
